Chile poblano is the main ingredient in the popular recipe of Rajas Poblanas. Rajas Poblanas is a mix of chile poblano sliced in strips, onions and fresh corn, sauteed together with oil and sour cream until soft. Then the corn tortillas are filled with the mix of vegetables and served with a variety of Mexican favorite garnishes, such as avocado, purple onion, chicle habanero, radishes, cilantro or diced tomatoes.
